Vintage:

Albariño is an early-ripening variety, so the start of the harvest is normally in the second half of September and takes place over two weeks, a time that varies depending on the state of ripeness and the amount of grapes to be harvested. .

Continuing with tradition, the grapes are harvested manually in boxes with a maximum capacity of 20 kilograms, in such a way that the grapes are kept in optimal conditions from the moment of harvesting until they are received in the winery.

Fermentation:

Fermentation in stainless steel at 16ºC for 21 days, remaining on its fine lees until stabilization and bottling.

Tasting Note:

Straw yellow color with a slight greenish hue, clear and bright.

Medium-high intensity, floral (orange blossom), citrus (lemon peel, grapefruit and tangerine), tropical (mango, lychees) and stone fruits.

Albariño in its purest form, very fresh and intense. Oily and balanced palate. Fruity and citrus memories, with a long and very persistent aftertaste.

Our distinguished and risky image, our desire to go outside the box and the creation of a world-renowned brand have become the three pillars of the Paco & Lola philosophy. These pillars are behind everything we do, from the design of the bottles, wrapped in their characteristic polka dots, to the process of making our wines. Faithful to this philosophy we have become one of the most recognized wineries in the D.O. Rías Baixas.

The basis on which our pillars are based is to make exceptional wines for exceptional people.

Paco & Lola is a winery founded in 2005 at the initiative of a group of viticulturists and wine producers from the O Salnés region, who decided to professionalize their production. This cooperative is called “Arousana Wine Cooperative Society” and is currently made up of more than 400 members, being the most important cooperative by number of members of the D.O. Rías Baixas.

The winery has 200 hectares of its own vineyards spread over more than 1,800 plots, characteristic of the Galician smallholding and located entirely in the “Val do Salnés” subzone.

Our facilities are equipped with the latest technology applied to the wine sector. This modern technology, together with the tradition of our winegrowers and the know-how passed down from generation to generation, allows us to obtain the maximum expression of the grapes, guaranteeing a magnificent result vintage after vintage.

Throughout the year, our viticulture department carries out careful work focused on advising and controlling the vineyards with the aim of achieving the highest quality of the grapes at the time of harvest. We not only apply these exhaustive controls in all our vineyards, but also at each stage of the winemaking process, guaranteeing the highest quality of our products.

Quality is the driving force behind everything we do at Paco & Lola. Each and every member of our team is committed to our rigorous internal quality policy. However, we don't just comply with the rules, we go beyond them.

For this reason, we are certified with BRC (British Retail Consortium) and IFS (International Food Standard) which guarantee the quality and safety of all our products.

These certifications are obtained after an annual review of our practices and an annual audit of our entire production process from the origin of the raw materials used to make the final product itself.

BRC and IFS are certifications recognized around the world so bearing their seal of guarantee is additional proof that our products live up to the highest standards of the wine industry.

Vineyard:

Albariño is considered one of the most important grape varieties grown in Galicia. It is an early maturing variety with small clusters, golden and sweet grain, which stands out for its great capacity for the production of sugars and its richness in acids.

The cultivation of the Albariño grape in the Rías Baixas is a complex process due to the morphological peculiarities of the land and the climatic conditions of the Val do Salnés. The traditional form of cultivation in the Val do Salnés is the “horizontal vine”.

The cultivation is carried out supported by granite poles typical of the area, approximately 1.80 meters high, which allow maximum use of the sun's rays and keep the vine away from soil moisture, facilitating the necessary aeration and care for achieve optimal development of the vine.

Since its inception, Paco & Lola has opted for sustainable production by carrying out integrated management of vine cultivation. This is a plus in terms of sustainability and respect for the Environment.

Since 2010 we have been member partners of the Life Project “Viñas Atlánticas” (Life + Atlantic Vineyards), an innovative project that involves all winegrowers to minimize the use of chemical products, through different techniques and coordinated actions within a System of Environmental management.
