The cannery El Pescador de Cantabria was founded by Angel Viadero at the beginning of the 20th century. It was born under the protection of the Fishermen's Association of Santoña, Cantabria, with the sole purpose of making all the knowledge that Angel Viadero had acquired from the best Italian canners who came to this northern land come true. Thus it was that they began to conserve in a totally artisanal way all the riches that the Cantabrian Sea provided: Bocartes (anchovies) and Bonito especially.
From these modest beginnings to the present, there have been important changes in the cannery, but its objective has always been the same: quality. Offer demanding customers the best raw materials from the Cantabrian Sea, made with the same love as in the beginning and all seasoned with the best olive oils and salt as the only ingredients, with no additives.
In 2008 they have celebrated their First Centenary and we hope to meet more. José Antonio Valle Viadero, grandson of the founder, part of the third generation of canners and the fourth is already underway. His children continue to be excited every day with new varieties, new formats... but his philosophy remains the same: The best raw materials from the sea in the best artisan hands with the best olive oils and salt. The result is already known to most of you.
These are the words with which the Master Canner, José Antonio Valle Viadero, introduces us to his cannery. With them he invites us to get to know and enjoy his traditional and artisan products.
