100% Tempranillo

VINTAGE

Exhaustive selection of two vineyard plots located in Villalba de Rioja, the border area of cultivation. Manual harvest in boxes, with selection of bunches in optimal ripening and sanitary conditions in the vineyard and in the winery using a selection belt.

ELABORATION

Traditional preparation. Cold pre-fermentation maceration with dry ice. Destemming, with daily pumping over combined with delestage and bazuqueos. Fermentation in wooden vats at controlled temperature (28ºC). Malolactic fermentation in barrels. Aging: 20 months in 225l single-use French oak barrels.

CATA'S NOTES

The color is cherry red with a high layer. Complex and fragrant range of aromas with memories of blackberries, licorice and base notes of clove and graphite. In the mouth it is lively and enveloping with sensations of plums, balsamic and minerals that merge in a tasty and persistent very round finish.

PAIRING

 It is perfect to accompany beef, smoked meats, soft cheeses and international food.

Consumption temperature: between 18ºC and 20ºC.
