Tasting Note:

Color. Garnet, intense cherry with violet nuances, characteristic of all our wines. In the glass it is bright and clean, with a dense tear.

Scent. Intense and complex, with hints of cherry, blackberry, mint, pepper and graphite.

Mouth. It is a sweet wine, fresh and fleshy at the same time, with abundant fruit notes and chocolate cherry liqueur.

Red with 6 months of aging

14% vol

Operating temperature:

14º-16ºC

Speak Wineries

It was not easy to find the terroir where we could make the type of wines we dreamed of from the beginning. A land that would force us to get the best out of each strain and that would give our grape varieties a strong personality to produce unique wines.

In the middle of two hundred hectares of this Trujillo estate that the Greeks cultivated in ancient times, stands the building that houses our winery, one of the most advanced in our country.

Our research work reaches all areas and processes that have to do with viticulture and oenology. We look for the best advisors in each field and the latest techniques available.

The influence of irrigation on the aromatic capacity of the grapes and the study of the aromatic potential of the grapes to determine the harvest date. Collaboration with the Aroma Analysis and Oenology Laboratory, Faculty of Sciences of Zaragoza.

Study of the influence of sequential inoculums of non-Saccharomyces yeasts (torulospora) with Saccharomyces on the development of aromas, in collaboration with the Faculty of Oenology of Bordeaux and SARCO.

Measurement of sap flow for plant water knowledge, in collaboration with E.N.S.A. Montpellier and the University of Berkeley.

Selection of native yeasts, in collaboration with the E.T.S.I.A. from Madrid.

VINEYARD

200 hectares of difficult land, a slate farm, not very fertile and demanding, but that knows how to take care of the plant. Not receiving enough water, the strain fights to survive and strives to find it itself, giving little, but its best. In this way the grape will tell us with its aromas where it is planted. It is the mystique of “the essence”.
